Oven Roasted Tomatoes
These roast tomatoes are a lovely addition to a sandwich, salad or pasta.
Ingredients
1 and 1/2 cup cherry tomatoes, rinsed and dried
1/2 teaspoon kosher salt
1 Tablespoon chopped fresh herbs- I use a mixture of basil and thyme, but could substitute oregano
1 teaspoon olive oil
Instructions
Heat oven to 400
Spread tomatoes on a rimmed baking sheet lined with foil or parchment paper
Toss tomatoes with salt, herbs and olive oil
Roast 15-20 minutes until the skins are split
Let cool
