Grilled Caprese Sandwich

Herbaceous, garlicky pesto, paired with oven roasted tomatoes and melty mozzarella make for a serious sandwich. You can also skip the grilling and serve cold. Enjoy!

Yields: 2 servings



  1. Coat the bottom of a non stick skillet with olive oil and heat over medium heat
  2. Spread a heaping teaspoon of basil pesto on each slice of bread
  3. Layer with roasted tomatoes and torn mozzarella
  4. Assemble sandwich and grill until bread is golden brown and the cheese is melted. Be sure and do this over medium heat. Higher heat and your bread will be done before the cheese has time to melt.
