Spinach Salad with Balsamic Vinaigrette
Yields: 4 servings
Ingredients
- 1 bag organic baby spinach
- 1/4 C toasted pecans (or can sub walnuts)
- 1/4 C dried cranberries
- 2 oz good quality blue cheese, crumbled
- 1/4 C Homemade Balsamic Vinaigrette
Instructions
- Toast your nuts in a dry skillet until they are just barley browned and nutty smelling. Set aside
- Place dressing in bottom of a large, wide serving bowl
- Toss with spinach until all leaves are coated
- Top with nuts, cranberries and blue cheese
- Serve to happy people!
