We are Alan+Amanda. Thank you so much for being here!
Before we can tell you about where we are today, we need to rewind a couple years. We were living a pretty great life, had two successful careers, traveled extensively and cooked really good food together for some really great friends.
Then, we had a baby. Life’s greatest curveball and the best experience of our lives. However, Alan was still working 60-70+ hour weeks as a partner is a large multi-specialty medical practice. He would leave home to round at the hospital in the wee hours (like 5am!) and many times would get home long after our sweet new baby was already down for the night. It was heartbreaking. We knew there had to be better way to live.
So, we made a leap of faith. We sold the home we had made together, left behind a host of amazing friends, (and our successful, established careers), moved to the beautiful Texas Hill Country and embarked on a new adventure. Three years later, we have built our dream house, made amazing friends and we have the precious gift of time together. We have breakfast together as a family every single day and Alan loves being a country doctor. We have the ability to enjoy life together every day, not just on the weekends and during vacations. We cook together, we watch sunsets, we play legos, we spend time at Alan’s family ranch, and we are hopefully showing our son by example how to live a balanced life. How to work hard, but not at the expense of your relationships with your loved ones.
The other part of our story is that in December of 2016, Alan diagnosed himself with Type 2 diabetes. The man was healthy and active with no risk factors. A total shock. And talk about a throwing a curveball into our dinner routine! We have always eaten well, but we used to feel no meal was complete without bread or pasta. So if you have diabetes, or just like to lead a low sugar, low carb lifestyle, and you really, really like food, you have found your spot. Welcome, friend. I won’t promise you won’t find the occasional pasta dish or dessert around these parts, we’re human after all. But by and large, this space is a collection of low carb, low sugar meals that are still big on flavor and super satisfying.
Our cooking is inspired by our travels, our simple love of good food and our pleasure in sharing it with those we love. We hope you can find something here to take to your table.
