My. Goodness. I can’t stop eating the stuff. And you can make it ahead of time. Hello, perfect Thanksgiving Day appetizer! Nice to meet you.
This Baked Brie with Cranberry Chipotle Chutney is the perfect, super easy, really pretty, make ahead, dinner party, office party, date night, girls night, book club, you-just-had-a-bad-day-and brie-will-make-it-better, you-just-had-a-great-day-and-you-need-celebratory-brie appetizer.
It’s obviously perfect for sharing, but in truth, you could leave me alone with this baked brie business, a glass of Sav Blanc, a good book, and I would pretty much be in heaven.
As you can make the chutney a couple days ahead so it’s so, so perfect for an easy (yet impressive) Thanksgiving Day appetizer. While you are busy putting the final touches on your Thanksgiving feast, your guests can be oohing and ahhing over your baked brie with cranberry chipotle chutney. They can also be oohing and aching over my other favorite make ahead appetizers. Like our Spicy Cashews, Salmon Gravlox and White Bean Hummus Dip. Three cheers for make ahead dishes for the holidays!
Baked Brie with Cranberry Chipotle Chutney
Easy, impressive holiday appetizer.
- 1 8 oz Round of Brie
- 1 Cup Cranberries, fresh or frozen
- 1/3 Cup Sugar (can add more if prefer sweeter)
- 1 Teaspoon Cumin
- 2 Tablespoons Adobo Sauce from can chipotle peppers
- 1 canned chipotle pepper- seeded and minced
- Pinch kosher salt
- Squeeze Lemon Juice
- For the Sauce
- Combine all ingredients except the Brie in medium sauce pot and set over medium heat
- Cook until sugar dissolves and cranberries pop- about 10 minutes, stirring frequently
- Adjust sugar and salt to taste
- Sauce can be made up to 2 days ahead and kept in airtight jar in refrigerator. Bring to room temp before serving.
- When ready to serve-
- Preheat oven to 350 degrees F
- Place Brie Round on a baking sheet and bake 10 minutes.
- Top Brie with Chutney and serve with crackers.
