Well, hello there, my favorite little corner of the internet. Long time no see. We’ve been a smidge busy over here. You could say we got ourselves a new kitchen. (the better to make this addictive tomatillo salsa- but we’ll get to that. Feel free to just scroll on down for the recipe) I’ve had a lot of requests for kitchen pics, so here ya go. We were shooting for a modern farmhouse feel that I think we’ve more or less accomplished. I feel happy in the space, so I’m calling it a win.
Eighteen months after we fell in love with this view, our builder handed us the keys to our forever home. We are still slowly and lovingly settling in bit by bit.
Our other big news is less fun. A few months ago Alan diagnosed himself with Type 2 Diabetes. Completely unexpected as the man is healthy and active with no risk factors. Diabetes is an awful and life changing diagnosis for anyone, but for a man who loves food and wine? Heartbreaking on a completely different level.
Our silver lining is Alan’s extensive knowledge of his disease state and experience managing it for his patients. However, we refuse to go quietly into the dark night of cardboard food. We have made some big changes to our menus. Mainly keeping carbs and sugar to a minimum, while still creating mouth watering meals that are just as satisfying without the bread, rice and pasta. We’ve been experimenting with new flavor profiles. Vinegars, citrus and spices, oh, my! If you are on the lookout for low carb, low sugar meals that are still bursting with big flavors- you have found your spot. Stay tuned for more.
We finally have a garden again. Hooray! It is exploding right now, and we are having a ball experimenting with all our fresh summer veggies. Today I was in need of a quick snack and this tomatillo salsa was born. On a different day (say, maybe when the temps dip below triple digits), I might roast the tomatillos and the jalepeno for an even richer flavor profile and possibly toast some cumin seeds as well. But today, I’m hot and a little bit lazy. So all this goodness just got pulsed in the blender.
You will love this salsa because 1. it takes five minutes flat and 2. it is so versatile! It’s been less than 24 hours and it’s almost time to make another batch. I inhaled it on chips yesterday afternoon, drizzled some over Korean Short Ribs for dinner and it jazzed up our eggs this morning. This is a new summer staple around here.

Tomatillo Salsa
This salsa is light, refreshing and herbaceous with just the right hit of heat. Enjoy with chips, on tacos, on grilled meats or add to your morning eggs! Enjoy!
Yields: 1 and 1/2 cups
- 4 large tomatillos, husked, rinsed and roughly chopped
- 1 jalepeno, roughly chopped (remove seeds for less heat)
- 1/4 medium red onion, roughly chopped
- Juice from 1/2 lime
- Big handful cilantro, big stems removed
- 1 large garlic clove, peeled and roughly chopped
- Salt to taste
- Add all ingredients to blender or food processor.
- Pulse until smooth.
- Add salt to taste
- Preparation time: 10 minutes
- Cook time: 1 minute
- Total time: 11 minutes

I feel Alan’s pain. In March i was dx’d. Genetics and stress caught up. I had 14 A1c. But I had finally lost my midlife weight and knew how to balance food. I now am at 5.9 from 3 months ago being 14. No potatoes,biscuits,cakes cookies anymore But I love the salsas like this. It is just a different kind of cooking for me now. Learning what I can eat . I do feel better now . We will have to continue to compare notes!!

I make a peach salsa also..and I tried the tomatillo salsa on my eggs this morning..new experience for me but it was delicious. Do you grow your own tomatillos? HEB did not have many to pick from..going to have to watch for these now. And get another jalapeno plant.
